Call Me Old Fashioned - Macaroni Salad Recipes

Here are three recipes for old fashioned macaroni salad and one for homemade cooked salad dressing. The ingredients are simple, without preservatives and additives.

Marinated Macaroni Salad

3 cups macaroni, cooked and cooled
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vinegar
4 tablespoons olive oil
Mix ingredients well in a large bowl. Add the 3 cups of macaroni and marinate for at least 30 minutes. Drain.
Add to the macaroni 1 diced sweet onion, 1 diced green pepper, and mix with mayonnaise. Stir to incorporate ingredients.

Macaroni and Tomato Salad
2 cups cooked and cooled macaroni
1 green pepper, finely chopped
1 small sweet onion, finely chopped
Mayonnaise to taste
Fresh, ripe, garden (preferably) tomatoes, sliced
Lettuce leaves
Combine macaroni, pepper, onion, and mayonnaise. Mix well.
Line a serving platter with lettuce leaves. Lay out thick slices of tomato over the lettuce. Top each tomato with an ice cream scoop of the macaroni mixture.

Macaroni and Olive Salad

3 cups cooked and cooled macaroni
1 cup chopped celery
1 cup chopped stuffed olives
1 tablespoon chopped onion
1 tablespoon chopped parsley
1/2 cup mayonnaise, or more as needed
Combine ingredients and mix thoroughly. Serve cold.

Cooked Salad Dressing

(May be used in place of the mayonnaise in the salads.)
1 teaspoon salt
1 teaspoon mustard
1/2 tablespoon sugar
1 tablespoon flour
Yolks of 2 eggs
2 tablespoons melted butter
3/4 cup milk
1/4 cup vinegar

In a saucepan, mix the dry ingredients together (before turning burner on). Then add the eggs, butter, and milk, stirring thoroughly. Add the vinegar slowly. Cook over medium heat until thickened, stirring almost constantly.
