Tasty Shrimp Salad Recipe: Good Food Fast

Busy days. Seems like everyone's schedule is jammed from sunrise to sunset these days.
When we do take the time to fix a decent meal we often end up making the same things over and over.
Here's an idea: Shrimp. Tasty, healthful, delicious, fast and easy to prepare shrimp!

The great, great thing about shrimp - other than the taste - is that only takes a couple of minutes to cook. (Literally!) And it turns pink to let you know it is done. That is a great feature that I appreciate.
Yeah, shrimp is a little pricey. Then again, so is steak. I checked in my area and found that their cost is similar. And, no, we won;t have it three times a week. But wasn't that part of what we were trying to avoid?
For a quick light meal that happens to be delicious try this shrimp salad recipe...

It's made by combining mayonnaise (use light mayo in the event that you are counting calories), celery for a nice fresh crunch, flavor with Old Bay Seasoning and lemon juice. A pound of cooked, peeled and deveined shrimp is all you need.

Here's How To Make Shrimp Salad...

Cook the shrimp in a medium saucepan with two cups of water. Pop in the unpeeled shrimp. Cook for about 5 minutes or until the shrimp's built-in thermometer - turning pink - says they are done. Drain the shrimp and place them in ice to speed things along and stop the cooking. After they've cooled, remove the shells and devein the shrimp.

In a large bowl, mix the first four ingredients, add cooked, peeled and deveined shrimp. Then toss to coat with the mixture. It's best if you can take the time to put them in the fridge for about a half an hour before you serve.

Here are some other things you can do with the same basic recipe...
1. Make a bed of lettuce on a cold plate.
2. Put the mixture on the greens and enjoy.
3. Shrimp Salad Sandwich. Put the salad on a nice croissant or a fresh sandwich roll. I call it a portable shrimp salad! (Bet you didn't even know you needed one of those.)
