Cooked Chicken Recipes

These cooked chicken recipes are delicious. Just check these out and I'm sure you'll be amazingly surprised.
So here we go for some cooked chicken recipes:

   White Cooked Chicken

1 whole chicken broth to cover 3/4 way
1 cl garlic, minced
1 tb cornstarch
2 oz dark soy sauce
2 oz dry sherry
2 oz rice vinegar
2 scallions, minced sesame oil
3 ginger slices
3 scallions in 1 pieces
4 ts water
Wash chicken and pat dry. Put in a kettle with broth, scallions, and ginger. Bring to a simmer. Skim off any scum that rises to the surface. Let simmer at lowest heat for 20 min, covered. Turn heat off and let steep for 1 hour. Remove chicken, disjoint, and arrange on a platter.

Take 1 c liquid (saving the rest for another use). Bring to a boil and reduce by half. Add soy sauce, sherry, garlic, and vinegar. Mix in cornstarch mixed with water. Cook until thickened. Taste for seasoning, correcting with salt as necessary. Add scallions at the last moment. Pour sauce over chicken and flick a few drops of sesame oil over the top. Serve warm or cool.

  Chicken Cooked With Rice

1 1/2 c long grain white rice
1 1/2 tb peanut oil
1 tb light soy sauce
1 t cornstarch
1 t salt
2 ts sesame oil
2 ts dark soy sauce
2 ts minced peeled fresh ginger
2 ts rice wine or dry sherry
8 oz boneless chicken thighs with skin removed
Garnish
1 tb dark soy sauce
2 tb finely chopped scallions

Put rice in clay pot or medium sized pot with water to cover about 1 inch. Bring rice to boil; cook until most water evaporates. Reduce heat to low and cover tightly. Coarsely chop chicken; combine with soy sauces, wine, salt, sesame oil and cornstarch. Heat wok or large sauté pan until hot. Add oil and ginger; stir fry for 10 seconds. Add chicken, and stir fry for 2 minutes.

Pour the contents of wok on top of the rice, cover, and continue to cook for 10 minutes. Just before serving, drizzle the soy sauce on top of the rice and garnish with the scallions.
