More Than One Easy Fish Recipe - Fish For Every Day and Special Days

Having more than one fish recipe to fall back on in an emergency is very important. Having a can of Tuna and some frozen fish at hand at all times means you can have food on the table in a jiffy. This is why I have more than one fish recipe and I think you will find them very handy as well.

The first recipe is a tuna recipe. It can be served as a light meal on toast or as the main course on rice or noodles. If you serve it with rice or noodles, add a fresh salad and you have a very tasty dinner in a very short time.

Tuna delight
Ingredients:
  • 2 Tsp. butter
  • 2 Tsp. flour
  • 1 x 7oz tin Tuna
  • 1 cup cooked tomatoes
  • 1 cup grated cheddar cheese
  • 1 lightly beaten egg
  • ½ tsp prepared mustard
  • ¼ tsp. salt
  • ½ tsp. Worcester sauce
  • ¾ cup milk
  • 1 small chopped onion

Method:
  1. Melt butter, add flour and blend well.
  2. Add seasoning, tomato and egg.
  3. Cook for a few minutes - add heated milk.
  4. Add Tuna, simmer for 5 minutes.
  5. Serve on cooked rice, noodles or toast.
The haddock pie recipe is a one dish meal, all it needs extra is a tasty fresh salad.

Haddock Pie

You will need cooked rice, breadcrumbs and slices tomato for this dish.
Poach the haddock in milk - remove from milk - take skin and bones out. Flake the haddock (not too finely).

Make white sauce not too thick - add 1 tsp. curry powder to every cup of white sauce. Add flaked fish.
Line greased ovenproof dish with slices of tomato - put a layer of cooked rice then a layer of haddock mixture alternately into the ovenproof dish, ending with the haddock mixture.
Put slices of tomato on top, then the breadcrumbs and lastly the grated cheese and a few dabs of butter.
Bake it in a moderate oven until the tomatoes are done.

Fish Creole (serve six)

Use any white firm fish like Hake or Kingklip
Ingredient:
  • 1 cup sliced onions
  • 1 cup sliced green pepper
  • ¼ lb. sliced mushrooms
  • 1 oz butter or margarine
  • 1 x 10 ½ oz can cream of tomato soup
  • 1 x 10 ½ oz can cream of celery soup
  • ¼ tsp. thyme
  • ¼ tsp. chili powder
  • ¼ tsp. Tabasco
  • ½ tsp. salt
  • 2 lbs. fish of your choice steamed and left to cool

Method:
  1. Sauté onions, green peppers and mushrooms gently for ten minutes in melted butter or margarine.
  2. Add seasonings, celery and tomato soups.
  3. Stir to blend, simmer for another ten minutes.
  4. Take from heat and stir in the fish, broken into small pieces.
  5. Add more salt if necessary.
Serve immediately with hot fluffy rice.

Alternatively, pack the rice into a five-cup ring mould - unmould onto a heated platter and fill the centre with the mixture. Around the outside spoon coated buttered peas and carrot rings.
The haddock and cheese recipe is once again pretty substantial and is very tasty with crusty rolls and a fresh salad.

Haddock and Cheese

Ingredients:
  • 1 ½ lbs. haddock
  • 1 egg
  • Tomatoes (sliced)
  • ½ cup grated cheese
  • 1 cup milk
  • Butter

Method:
  1. Boil haddock for 5 minutes and then pour off the liquid.
  2. Flake the haddock.
  3. Put a layer of haddock into a buttered dish, then a layer of grated cheese, followed by a layer of sliced tomato.
  4. Repeat this until all is used.
  5. Beat the egg with the milk and pour over.
  6. Season with a little pepper
  7. Put lumps of butter on top and bake in a moderate oven until it sets.
Remember, always use strong cheese in these recipes. Do not substitute oil for the butter, the butter is much tastier. Now that you have more than one easy fish recipe, it can be on the menu more often.
