Recipe for Tangy Sweet Grilled Chicken Salad

What You Need
  • 1 can condensed tomato soup 10 ounce
  • 2 Tablespoons soy sauce
  • 2 Tablespoons honey
  • 2 Tablespoons vinegar
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • 4 boneless skinless grilled chicken breasts
  • 8 cups shredded mixed salad greens
How to Make It
Using a large shallow mixing bowl you will add the condensed tomato soup, soy sauce, honey, vinegar, garlic powder and ground ginger. Blend well to combine. Reserve ¾ cup of this dressing mixture and place in the refrigerator to chill until needed.

Cut the chicken breasts into small bite size pieces of about 1 inch squares or shred the chicken for the salad. Add the chicken to the remaining dressing mixture. Place it in the refrigerator to marinate overnight or for at least 3 to 4 hours before grilling.

After marinating the chicken remove from liquid and drain. Arrange chicken on the grill over a medium heat and grill for 15 minutes on both sides until done. Brush with the marinade sauce every so often to keep the meat tender.

After grilling the chicken until done, allow the meat to cool slightly and then cut the chicken into thin slices for serving. Add the shredded mixed salad greens into a serving platter and then top with grilled chicken strips. Pour the reserved salad dressing over the grilled chicken salad before serving.
