Preheat the oven to 400F. Wrap the sweet potatoes in foil and bake for about an hour, or till completed. Run cold water over the sweet potatoes and take away the skins.

Turn the oven's temperature down to 350F. In a big bowl, combine all of the filling ingredients except for the evaporated milk and eggs. Use a beater at medium speed to blend the mix, scraping the bowl frequently, till well mixed. Lessen the speed to low; add milk and eggs. Continue to beat till everything is well mixed.
