Overdo it a little when you bake a pie crust. They need to be a golden caramel color rather than pale blonde. The golden color is a sign that the sugars in the crust have finally caramelized.

Wait until dried beans have softened before seasoning them with garlic or salt. Some seasonings prevent the beans from softening while they cook. To achieve the texture you desire, let the beans cook until they are partially done before you add any seasonings.

It can be difficult to figure out how long you need to keep meat on the grill. Use a good meat thermometer (a digital one is more accurate) so that you can ensure the inside is cooked correctly. Thicker cuts of meat should be cooked with the grill lid shut, in order to reduce the amount of time cooking and maximize juiciness.

When sauteing food, don't put too much oil in the pan. Too much moisture can cause food to steam rather than saute, affecting the crispness of the meal. Remember, sauteing is always done at low temperatures.

When preparing pasta, it is important to add salt to the pot of water. Seasoning added while it cooks will "set" in the pasta. Salting pasta after cooking is often unsuccessful because the pasta will not absorb the salt then, it will only sit on top of the noodles.

If you don't know much about the vegetable or fruit that you are handling, familiarize yourself with it. When you've done some research, you might be surprised to learn how versatile a particular new food is. If you do your homework before you start cooking, it will be more fun.

Try drying your own tomatoes. Cut Romas tomatoes in lengthwise halves, or slice ripe regular tomatoes into half inch slices for drying. Place them cut-side up on a rack that you use for cooling, and add a little salt. Heat your oven to 190 degrees and place the tomatoes inside for as long as ten hours. The dried tomatoes can be put in plastic bags and frozen. Another option is to place the tomatoes in a jar and cover them with fresh herbs and olive oil. Use them within two weeks of refrigerating.

Enjoy greens in the winter time. After a first frost, these veggies have a very sweet yummy taste. Only cook the greens that are fresh and colorful, discarding any that are limp or pale hued. Take good care when washing them because they can be very dirty. Put the veggies in water and shake them off. Then rinse them until the water is running clear.

Measuring and chopping ingredients before you begin cooking can save you time. It is sometimes possible to do some preliminary tasks in the days preceding the actual meal preparation. With this added preparation, you may find that meals are less stressful, as well as more flavorful. Once you start advanced preparation, you might not ever return.

Make big portions when preparing stock. Instead of making a single serving, make a whole stock pot and save the leftovers so you can freeze them. Homemade chicken stock adds great flavor to everything from soups to casseroles. Put the stock into freezer bags and put it in your freezer.

Getting a meal ready for a gathering involving a lot of family is something that can stress you out tremendously. Instead of panicking, do all the preparatory work a night or two before the big event is to occur. Your prep work might involve cutting up vegetables, measuring ingredients, and marinading meats.
